I'm going bananas ...

Hubby is on a health kick at the moment … so he's been buying lots of bananas.

He hasn't been eating them … just buying them.

Now we all know the drill with bananas … don't we … it goes something like this …



Luckily I managed to catch this bunch about 48 seconds before they reached the absolute point of no return.


And because I'm not on a health kick I decided to turn them into a cake … which is my personally favourite way of getting my 2 servings of fruit each day.

I used a recipe from this delightful book.


It's an Australian Women's Weekly publication … and as a community service I will let you know that the Australian Women's Weekly always has the best recipes for everything.

I gave this book to Hubby for his birthday one year … because I wanted it … that's how we roll around here.  Which kind of explains how I managed to get a BBQ for Christmas.

Here's the actual recipe … in case you have a bunch of overripe bananas too.


Follow the recipe … shove it in the oven … and ta-da …


Yummy, scrummy banana cake.

The recipe suggested passionfruit icing, but a) I didn't have any passionfruit and b) I prefer cream cheese frosting … so that's what I made.

Hubby had two slices after dinner last night … so I guess he managed to get his banana intake after all!

  1. SNAP!! I made baked with Bananas yesterday too. But I made Banana & Chocolate chip muffins, except I improvised with white chocolate as the bog standard brown buggers weren't available at Bin Inn. Trust me, they are yummo! Today I have made two, Sultana cakes, but due to a lack of sultanas they are now Sultana & Cranberry cakes!! One for home (TOF) and one for the lads at work. Obviously I too am on a health kick. I love your gift giving!!

    1. Oh I think white chocolate beats milk chocolate any day of the week … so that sounds like a perfect combination … YUM!
      Sultanas in anything … even cake … are definitely healthy … that's what makes wine so good for you ;0)

  3. Bananas are the first fruit to go in our house...but if my are left they become cake too...we like ours hot and lathered with butter.....the banana bread that is. Xxxxx

  4. I've been buying loads of bananas too, but I've actually been eating them so unfortunately they haven't had time to reach the over-ripe-and-ready-to-be-mashed-for-cake stage. Your cake looks a lot better than the recipe I've been using and the frosting!! Do you have a recipe for that too? Hubby's a lucky guy to have a wonderful, talented wife who understands how things work ;) xoox

  5. Bananas and pears, same evil thing, you got to catch them, you turn your back on them for a minute and then they go brown - I much prefer your banana cake to mine though, it looks delicious, especially with the frosting, I've never made cream cheese, please tell! x x x

    1. Cream cheese frosting is the best … I used 30g of soft butter, 80g soft cream cheese and 1 1/2 cups of icing sugar. Beat the butter and cheese together until light and fluffy and then add the icing sugar gradually. Yummo!!
